Slow Cooker Mediterranean Beef Stew

Place the seasoned beef on top of the vegetables inside the slow cooker. Slowly pour the prepared sauce mixture over everything, making sure the beef and vegetables are well coated.

Cover the slow cooker with the lid and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. As it cooks, the beef becomes incredibly tender and the vegetables soften perfectly while absorbing all the delicious flavors from the broth and spices.

Once cooking is complete, gently stir the stew to combine all the ingredients. Taste and adjust the salt if needed.

Serve this hearty beef stew warm with rice, mashed potatoes, couscous, or crusty bread. Garnish with fresh parsley if desired for a fresh finish. It also stores beautifully, making it perfect for meal prep or leftovers the next day.
