Ingredients

For the cake layers

  • 2½ cups all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional but lovely)
  • 1 cup canned crushed (well drained, reserve 2 tbsp juice)
  • 1 cup full-fat
  • 1 cup sweetened shredded

For the pineapple cream filling

  • 1 cup crushed pineapple, drained
  • ½ cup pineapple juice (from the can)
  • 3 tbsp sugar
  • 1½ tbsp cornstarch

For the coconut cream frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 3–4 tbsp coconut milk
  • 1 tsp vanilla extract
  • ½ tsp coconut extract
  • 1 cup toasted shredded coconut (for garnish)

Instructions

1) Prepare the pans

Grease and line two 9-inch round cake pans with parchment. Preheat oven to 350°F (175°C).

2) Mix the dry ingredients

Whisk flour, baking powder, and salt in a bowl. Set aside.

3) Cream butter and sugar

Beat butter and sugar until pale and fluffy (3–4 minutes). This step builds a light texture.
